When You Dip, I Dip, We Dip...
Everyone is finding different ways to deal with our stay-at-home orders. Hopefully in this first week you’ve set up your ideal working space, carved out a location to work out and your ‘fridge is stocked. We are keeping those who are considered essential and on the front lines of the COVID-19 fight in our thoughts and prayers. Here’s the deal, for those of us at home, we’ve pretty much already reached max stir-crazy. We think this week’s recipe can bring a little fun and excitement, because isn’t that the whole point in trying something new?
In situations like this “stay-at-home” order, it’s easy to reach for your stash of snacks. But if your snacks are delicious and healthy, you don’t have feel as guilty. Today, we’re pulling out the air fryer and trying some healthy chip and dip recipes.
Let’s star with the chips! We scoured the internet and found the below instructions for making light, crispy chips in your air fryer. Say goodbye to the preservatives and artificial ingredients in the bag you grab off the shelf.
Air Fryer Potato Chips

Step 1: Cut potatoes into thin rounds using either a knife or a mandoline slicer.
Step 2: Soak sliced potatoes in a bowl of cold water for 1 to 2 hours. Just like with the air fryer potato fries, this removes starch to make them perfectly crispy.
Step 3: Preheat air fryer to 300 degrees F (150 C). Drain and pat dry potatoes. Add to a bowl, then drizzle with vegetable oil (about 1 teaspoon per potato) and a pinch of salt.
Step 4: Add potatoes to your air fryer, spread out in as single of a layer as possible. Cook for 20 to 30 minutes, shaking the basket a few times during cooking to evenly cook.
Four steps?! We’re sold! Now, let’s add the dip.
Healthy French Onion Dip

Ingredients
Onions: You can use yellow or white onions and caramelize them with oil and a pinch of salt until deeply golden and delicious.
Garlic:Throw some minced garlic nto the onions at the very end of caramelization.
Greek Yogurt: Use the thickest Greek yogurt you can find (we’re sure there is greek yogurt left on the shelves) for an ultra-rich French onion dip.
Seasonings: Vegan Worcestershire sauce, salt, and white pepper round out the flavors.
Directions:
First, you will need to caramelize onion for your dip.
Slice onions into roughly quarter-inch thick slices.
Heat oil over medium/low heat, preferably in a heavy-bottomed pan (like cast iron) which will help the onions cook evenly. Add onion to the pan and stir to evenly coat them with oil. Cook for 10 minutes.
Sprinkle with salt, which will draw out some of the moisture in the onions.
Cook for 30 to 45 minutes, stirring every couple minutes, until onions are golden brown and caramelized.
Once your onions have caramelized, stir everything else together and you are done!
Easy Hummus Recipe
This recipe is tried and tested in our own kitchens. It is easy if you are a hummus addict like us.
Ingredients
1 (15 ounce) can garbanzo beans, drained, liquid reserved
1 tablespoon lemon juice
1 tablespoon olive oil
1 clove garlic, crushed
1/2 teaspoon ground cumin
1/2 teaspoon salt
2 drops sesame oil, or to taste (optional)
Directions:
Blend garbanzo beans, lemon juice, olive oil, garlic, cumin, salt, and sesame oil in a food processor
Stream reserved bean liquid into the mixture as it blends until desired consistency is achieved.
Kale & Artichoke Dip

Ingredients:
1 1/2 c. finely chopped kale
1 tbsp. olive oil
Juice of 1/2 lemon
kosher salt
Freshly ground pepper
2 c. Greek yogurt (preferably 2%)
1/4 c. mayonnaise
1 tbsp. honey
3 green onions, finely chopped
1/3 c. finely chopped red pepper
1/2 carrot, grated
2 garlic cloves, minced
1 1/2 c. finely chopped artichoke hearts
Directions:
Massaging kale is the key to loving it. Seriously! Combine kale , olive oil and lemon juice in a small bowl. Season to taste with salt and pepper. Massage kale with your hands to soften the kale and infuse the flavor of the olive oil and lemon juice. Let sit for about 10 minutes.
Meanwhile, mix the rest of ingredients in a large bowl or serving vessel. Fold in chopped kale and check for seasoning.
